A lovely ripe, healthy crop was harvested in late autumn. Temperature-controlled fermentation in closed tanks. Malolactic fermentation took place under the cap. Only free run juice used, no pressing. 15 months of ageing in first-fill barriques, followed by a year of ageing in bottle.
